Ingredients:
- three tbsp ghee or butter
- 2 tsp minced garlic
- three cups cauliflower, riced
- 1 tsp salt
- 2 tbsp lime juice + zest of 1 lime
- ½ cup sliced scallions
- 1 tsp recent cracked pepper
- ½ cup chopped cilantro
Steps:
- In a big skillet, soften ghee or butter. Add minced garlic for about 15 seconds till aromatic (cautious to not burn), then add cauliflower rice and salt. Mix and canopy for about 5 minutes or till cauliflower is tender.
- Toss with lime juice, scallions, pepper, and cilantro, and luxuriate in.
